Restoring Mac and installing stuff

I am doing a fresh install for my friend on his old Mac. I am installing SL, so once installed there are a ton of updates. Thing is he wants to do the whole set up your Mac thing when you first turn it on. But I want to get the ball rolling and install all those updates and MS Office before he does that. Is there a way to install all that, then get back to the "Set Up Your Mac" screen?
