Restoring on a 1.1.3

I would just like to first say that I am posting this on my brand new iPod touch (32g). I was wondering if I downgrade and jailbreak, if I need to restore it, would it restore it to the upgraded 1.1.3 that originally came on it?

It will restore to the latest firmware out, unless you hold down shift when you click restore, then you can choose which firmware you want to restore to, as long as you downloaded the firmware to your computer.
