Restoring specific items to the iPhone ?

I want to do a clean install without a restore from backup to choose what I want specifically. Is this possible ?

So first I shall backup my iPhone via iTunes then format my phone. What's next ? How can I choose to restore Apps, Music, and Pictures only ?

So it's either a full restore or nothing ?
