Restoring & Staying On 5.0.1

First things first, I have a Macbook Air running on lion and an iPhone 4S on ATT.

I installed tiny umbrella and backed up my SHSH blobs for 5.0.1 which is the current firmware on my phone

I am aware Apple is no longer signing 5.0.1. Therefore, I cannot restore and stay on 5.0.1. via iTunes as it's going to want me to upgrade to 5.1 I've been told not to restore via the iPhone's Settings-General-Reset-Erase all content and settings since it will loop/freeze the iPhone since it's jailbroken.

I want to do a clean restore on my iPhone and stay on 5.0.1.

What would be the right way of doing this, I don't want to jump the gun and mess it up. Any help will be appreciated.
