Can I restore Time Machine to a time before I installed certain software last night? How would I do that?

Yes you can.

I'm going to assume here you are on Lion or Mountain Lion.

Plug in the TM disk and option key boot to it. Start Disk Util from the recovery screen and erase Macintosh HD. Then click restore and you will get a window like the one below offering you various backup dates to choose from. Just pick the one you want.

Will that erase things I have downloaded since or e-mail I have received since? How long does a restore take?

Yes... that will put everything like it was on the backup date you select. Anything since then will not be there.

How long depends on how much data you have. If it is just the OS and not too many data files, it can take as little as 45 minutes.
