If I back up my iPhone will everything reappear on a new iphone if I restore to that new phone including camera roll photos all contacts/notes and text messages?....

Just wondering if anything doesn't get backed up and thus will get 'lost'.

Yes, just as long as the iOS is the same (correct me if I'm wrong?).

Yes, everything will be reloaded just as it was. In response to the other guys' post, you can't restore a backup from a newer version of iOS to an older version, but other than that it should be fine.
