I know that iTunes files have some sort of restriction on them for copyright reasons. Does anyone know exactly what the restrictions are? For example, if I were to purchase a full album off iTunes, could I copy it to my iPod and then turn around and burn a CD with the same songs/playlist?

You can burn unlimited CDs. You can put them onto your iPod (not sure if there is a limit - but your iPod can be synced with only one computer at a time). You can also put them on up to five computers, by "authorizing" each computer to play them in iTunes.
