Thinking about ordering iPhone 6 online and then go to store on launch day to see which one I like better. If you want to trade sizes in store, how easy/difficult will that be?

I could probably always wait and just buy it at the store, but the lines, ugh. Impatient FWP's. Thoughts?

If I had to guess, you won't be given priority and you'll have to basically wait in line for your "exchange" phone.
 
you'll be at the mercy of what's in stock that day. you'll be able to return it, sure, but there's no guarantee you'll be able to exchange it.

put another way, if you went in and was able to purchase the phone you were looking for outright, then an exchange will be possible.

Not a problem at all. You could even go on another day within 14 of your purchase.
