So I have 14 days of "buyer's remorse" time to change my mind. Do those 14 days begin 1) when I place my order, 2) when my MacBook Pro ships, or 3) when I receive my MacBook Pro?

I hope it's #3, but I'm thinking maybe it's #2?
 
I think it should be #3 only because it's the only logical one. How else can you decide if you don't physically have it.

Of course this is just imo, you should confirm with Apple.

For eligible Mac, iPad, iPod, and third-party products, you have up to 14 calendar days from the time you receive your item(s) to initiate a return. Personalized iPods (e.g., engraved or customized in any way) may not be returned for refund or exchange under any circumstances unless such product is Dead on Arrival (see the section below for more detailed information on such Dead on Arrival products). If the item is returnable and you send it back to us unopened in the original box, Apple will offer you a refund based on your original method of payment. You must return the product to the Apple warehouse within 14 calendar days of the issuance of the RMA. I know here in the UK the legal right to return starts the day after delivery. I'm not sure if you have that in the US.

Thanks a lot, guys. I'm not in the US, but it's likely there's a similar policy where I am, and it's really just common sense; thanks for the reassurance.

Just scroll to the bottom of the page on the Apple Store of your country and the terms link will be there. They are not that hard to read. They do very by country and there may a legal right as well.
