So before I jailbroke my ipad 2, I synced it to iTunes for backup.

However, I recently sync'ed the jailbroken iPad 2 to iTunes again, which I now I realize will have probably erased the non-jailbroken sync I previously did? So, in that case, if I ever wanted to reverse the jailbreak, is my only option to completely reset it back to the factory default settings?
 
You can sync it and then restore it and it should restore all you data minus the jailbreak. I just did that tonight.
 
Id advise keeping it and installing the pdf patch just so your not vulnerable, until Apple releases it's own fix in a week or so.
