I have a 2018 Mac Mini. I have kept up with all Catalina updates in hopes that it would get to the point where it wasn’t as buggy and works as stable as 10.14.6 with an eGPU, but alas, that hasn’t happened. I need to get to an eGPU so I can run four monitors due to my work flow requirements. Trying to run a fourth screen with a DisplayLink/StarTech USB adapter is too glitchy. So, I want to move back to Mojave and use a eGPU. What do I need to do? I know Catalina upgrades have put all sorts of drivers in the system that will need to be dealt with in the process.
 
You can "get back", but it involves some work.
Set aside a day off for this. It may take that long.

What you'll need to do (condensed version):
1. BACK UP your current setup using either CarbonCopyCloner or SuperDuper (both are free to use for 30 days, this will cost you nothing)
2. Boot to a SPECIAL VERSION of internet recovery (NOT to the "recovery partition") using:
shift option command R
3. Open disk utility and choose "show all devices" from the view menu
4. ERASE the internal drive to APFS with GUID partition format
5. Quit du, then open the OS installer and install Mojave
6. When done, run through setup. See if migration assistant can bring over anything on the backup (it may not work). If that doesn't work, then migrate apps and data "manually" from the backup to your new account. You'll need to do a "get info" on the backup drive, go to sharing and permissions, and check the option to "ignore ownership on this volume" to avoid permissions problems.

Again, if you really want to go back, this is what you need to do.

Here's another kink: will I need to do anything special to reinstall MS Office apps (need them for work use) like worry about the old key screwing me up and being told that I'm locked out because I've exceeded the uses for the license? I had that happen when I switched a 2012 MBP from HDD to SSD a couple of years ago.

If I have major issues, can I not just index files from iCloud and OneDrive then redownload apps from the store and online?
