I think I'm about to start on a big project of ripping all my movies. I have an Apple TV 4, a 4K TV and a very nice 7.1 surround sound system. I guess I'll be needing to get a large external HD or NAS to store all the movies on. I see that I can use MakeMKV (or Infuse) to rip the movies and then use Plex if I want to be able to stream to my Apple TV (or any other device) both locally and remotely.
But what if I also want the ability to download some movies to an iPad or laptop for use on long road trips (where streaming isn't feasible) or for watching on an airplane when I don't have access to the internet?
Does that mean that I would also need to to encode the movies using Handbrake and store a second copy in my iTunes library?

I'd suggest using VLC while on the road or plane.

So if I have all my movies ripped with MakeMKV to an external HD, I can point VLC to the file and tell it to download to my MBA, iPad or iPhone and I can then watch the movie without internet access?
