I have attached my mbpr to an amplifier and some speakers - but via the headphone output which is low.

I read the mbpr can do proper 'optical out' instead but does anyone know how?

I looked in the sound settings, two separate sound settings panels, and it doesn't jump out at me.

You have to connect an optical audio cable to it, a TOSLINK cable for example, with an end your amplifier accepts.

3.5 mm TRS cables are analog, thus no optical transfer via that.

Just plug an optical cable into the headphone jack, and voila, it switches to a proper optical out.
