Okay so I am very used to going into my Applications > PhotoshopCS3> setting it to run in rosetta and re-opening photoshop so I can use my scanner. I tried to do this today and the option to run in rosetta isn't in Get Info anymore. I have no sweet clue what has changed or how to fix it so I was hoping someone might have come across this and have a solution.

That's pretty odd. I'd start with some basics: use Disk Utility to repair permissions on your startup drive. If that doesn't help, you could pop in the Snow Leopard disk and manually reinstall Rosetta.
