I just got my new S4. Huge upgrade from my old S0.

I'm wondering about swimming. I see that if I do a swimming workout, I can do the "unlock" step at the end which I understand helps eject water.

But if I just go into the pool and I'm not working out, I don't see how to do this eject business. Am I putting the watch at risk by going into the pool and not starting an official workout?

You can flick up from the bottom of your watch to bring up control center. From here you can press the water droplet symbol to initiate the ejecting of water.

Too awesome, thanks. So you can loaf around in the pool at your leisure, and then eject at the end. Perfect.

Yeah you don't have to enable that before you jump into the pool. The Watch is waterproof either way. Just enjoy your workout and do the ejecting water thing a couple times and place it on the charger so that any residual moisture is removed from the heat generated while charging.
