Moving from S5 to S5, although I'm a little confused on how to proceed.

Do I set up the S7 first, so that everything is copied across, and then reset all content and settings on the S5 so that it can be sold??

Or do I erase the old first and set up the new (is a backup automatically created of the old when its erased??)
 
fwmireault hit it dead-on. Unpair your Series 5 first, which automatically creates a backup. You can then use that to setup your new Series 7. You don't have to use a backup to keep your activity history from your old Apple Watch, FYI. You're mainly just making sure that all of your settings and apps carry over. I've setup one of my Apple Watches as a new watch to try to fix a bug before, and I didn't loose any activity data.
 
A tip: if when you go to set up the new watch you only see older backups and not one from just now when you unpaired the old one, it is probably because your new watch shipped with a now superseded software version. You’ll need to set it up as a new watch, update it to the latest software, unpair it again, and then when you to set it up once more you’ll be able to choose the fresh backup from your old watch.
