I know you can switch from Light to Dark Mode via Control Center. I switched to Dark Mode and don't like the overall look and thus stuck with Light Mode.
My issue is that in Mail and Safari everything is washed out. On Catalina and previous versions I would be in Light Mode but the toolbars and side bars were decidedly darker and this made everything easier to see. On Big Sur everything is white and lost in the shuffle.
I've played with every iteration of color schemes I could find in preferences and Control Center and nothing specifically fixes this unless I move to Dark Mode for everything.
