iOS Safari browser help: Select Tag component

I've looked and looked and cannot find any developer help covering the Safari Select HTML object. It's behavior is unique in the iPhone and iPad and I need technical information about it. For example, when you press on a Select tag and the popup window opens with the list contents, can I control how many items display in the list? What JavaScript onChange events? They don't fire in the normal way so how do they fire?
