I used to use the ' + ' sign on the left of the address bar, and it would allow me to save the site to where I wanted to put it. But now that button only sends it to the reading list. :(

For sites used with some regularity, I use Bookmark. For a site or page I will probably not need to save long term, I use Reading List.
 
cheers, but how do you quickly save to your bookmarks - thats what the ' + ' button used to do….
 
To the left of the "+" button is the Share (arrow) button, click and and choose 'Add Bookmark'. Alternatively, you can just hit Command-D.

Many thanks….not really that intuitive, as it looks like a share button:eek:
 
You can also select the url and drag it to the Favourites Bar (if you have that showing).
