So it seems like any time I restart or if my MBP is in sleeping for long, when I return to use safari, all of my saved passwords are dropped, or not "remembered" on forums, on-line email, and banking stuff, but the url history is still there, so its not like all private data is erased.
And then, for some reason, firefox was just missing from the dock. I went to applications, found it, clicked, it was fine, and when right clicked on the icon to "keep in dock" it just said "remove" indicating that it was never removed.

Any Ideas as to why my computer is acting like this?

Check your security setting in Safari with regards to remembering passwords. Not all passwords can be remembered, after a certain period of time (or after you restart your browser) sites will normally log you out as a safety measure.
 
I read somewhere that having Webclips from Safari running in Dashboard can cause you to lose your passwords on forums and such. I tried it myself and I found it to be the case on my Mac.

Interesting, because I did just recently add a webclip top dashboard.
