Does the 12.9 inch iPad Pro show the desktop/"full" version of websites? Is there a setting for this? That display is just so big, it really should be the full desktop version of websites and not the mobile iPad version. (I'm trying to decide which iPad Pro to get)

It varies with the website. Sites are programmed as to what version they present to the user.

MacRumors presents the desktop site. Apple.com is also desktop, but iCloud.com is mobile.

There isn't a single setting you can make to change this for Safari, however, if you press and hold the reload button for a page, you'll have the option to Request Desktop Site (this works for iPhone as well, btw).
