Safari Top Sites is great as far as it goes, but I can't see a way to tell it which sites I want to see displayed..

Effectively Safari chooses based on most visited sites, and the pattern of sites visited can vary over time. Particularly over a long period. I have pinned most of the sites I wish to keep but have two or three others I'd like to replace. The problem is that I can see no way to over ride the safari nominated list.

Is there a way I can choose which sites to add?
 
You can remove any unwanted sites by just going to the top left corner of a site and hitting the X button. You can then enter a URL and drag that into the Top Sites window and drop it anywhere you want. However, top sites will always fill in the blank spaces with your most recent/most visited sites. No way to turn that off, at least not that I can find.
