Safari Top Sites on Big Sur

When using Safari on Big Sur, I can see all the top sites I used to have.

What I cant figure out is, I used to have some top sites selected as permanent and some selected as non-permanent. How do I change a site on Safari 14 to be non-permanent after it was set as permanent on a previous version of safari?
