Since Lion, issues with youtube with Safari are a problem. (some sites have issues where video just won't load) but youtube I find they do load, but if i choose to open a video in a new tab, it won't load, I have to reload the page for it to load. And sometimes videos just won't load at all and I have to use Chrome to watch the video. Any ideas?

Download the Flash un-installer (and run without any browsers running). Then install the latest Flash Player (again without running any browsers).

Lastly consider watching your YouTube videos in the highest definition by using the YouTube HTML5 HTML5 beta. Also consider the Click to Flash Safari Extension. This extension is definitely worth it.

I've tried all that but the only thing missing with youtube vids now is the definition, I can't choose 360, 480, 720 or 1080 at all. it plays whatever and i don't even know which it is.
