Is it safe to assume that Siri will be slower on Verizon than AT&T since it processes info thru Apple servers? I average about .7-1.5mbps and my buddy with AT&T averages 3.5-4.0mbps. Im thinking of making the switch to AT&T from Verizon for the data speeds. Both carriers work well in my area but the only burn I guess is I have unlimited data with Verizon now.

you should wait and try using it for a few days before you make a final judgement. It may not be as slow as you are anticipating it to be.
just my $.02

It's safe to assume most functions requiring data will be slower on Verizon than AT&T. But that doesn't mean they'll be unusably or annoyingly slower - just measurably.

Siri will send a tiny bit of data, not the actual recorded sound, back to apple for analysis. A bit like SoundHound/Shazam.
