I have a new old stock 2019 1TB 970 EVO Plus. I want to use Samsung Magician to upgrade the firmware for MacOS. I plan to use the SSD in an external Thunderbolt 3 enclosure, first with an Intel 2018 Mac mini and, when it arrives, with a Mac Studio.

Can I update the firmware via a Bootcamp Windows 10 drive, or do I need to use a native Windows computer?

Am I correct that when the update is completed, all I have to do is connect the enclosure and SSD to a Mac and reformat the SSD for MacOS? APFS?

Are there any snags that I should look out for?

You can update firmware via Boot Camp, no PC is required. You're correct on your second question. Nothing else to worry about.
