what are the chances of apple updating the ssds in the upcoming MacBook airs to take advantage of the 6gb connection that sandy bridge brings to the table? I'm having a hard time deciding between a new air or a new mbp with a vertex 3 ssd and their crazy read/write speeds

They have put SATA II SSDs in the MBPs and iMacs with Sandy Bridge, so chances are they will be the same. Although I'm not even sure that that limitation even applies with the type of connection the MBAs use.
