Planet earth.
I'm debating over which SSD Drive to get; Intel 320 or the Intel 510.

However, one is for SATA III 6Gbit speeds (510) and the other for SATA II 3Gbit speeds (320).

I'm on a Macbook Pro with SATA II and my question is;

Will an Intel 320 saturate real world speeds of SATA II in my MBP even though 3Gbit is technically 375mb/s? The 320 is rated at 275mb/s, but if real world SATA II speeds are higher, would I benefit from the Intel 510's 400mb/s speed eventhough its slightly above the 375mb/s theoretical SATA II transfers?

Real world SATA II speeds are ± 275 MB/sec max.

even so, the Intel 510 will be slightly faster on SATA II. See Anandtech's benchmarks.
 
I really don't think you would notice any speed difference with the 510 with your setup. Save the money and go with the 320.
