I was wondering if they new ePub capabilities of iWork, saving to ePub, means that ePub can be used for any kind of document instead of using PDF's for documents? Is ePub sort of equivalent to PDF? or is it more for books.

ePub is simply another standard, like Edison bulbs and polarized AC plugs.

If you open an ePub document in any ePub-capable software (iWork, iPad, Kindle?) it should look exactly the same and have exactly the same capabilities on each device.

Not even close. ePub is a superset of HTML.
