Yes you can. You can manage photos manually and select a folder. It will then include all subfolders in separate albums with the folder names being taken as the album titles.
I tend to keep a separate lower rez copy of my photos in a folder called "photos for iPod" and then subfolders with whatever pictures I want on there, but if you have hundreds of thousands of photos you have to be selective. :)

Hope this helps a bit.

Please provide steps on Windows XP. Thanks. thorne

On Windows -- organize the pictures you want to copy to your Touch inside a folder somewhere on your computer hard drive. This could be My Pictures, or some other folder. Inside this main picture folder, set up subfolders if you want. Each subfolder would be an "album" on the Touch.

In iTunes, click on your Touch, click on the "photos" tab.

Check "sync photos from," click on the box with the folder name on it (I believe it should show "My Pictures" by default). That should let you navigate to your picture folder on your hard drive.

Select "sync all" or "sync selected folders." If you are syncing just selected folders, check the folders you want to sync.

i just make a new album on iPhoto, and then when you plug you iTouch in and go to 'photos' and then the albums should appear anf you can click on something that reads like 'only add these albums' or something similar.
