Say I get the 5.5 and it's too big...

Apple has a 14 day return policy. However, if you are using an upgrade, depending on the carrier, it may take a few days after returning to get the upgrade credit back into your account.
Also, stores will have very limited stock. Even if you manage to find a store with one, chances are they'll only have the most popular one, black with 16gb or something.
I bet they keep stock for exchanges. Or at the very least they'll give you a rain check.
Question, does this exchange have to be at a Apple store for your country? I live near the border so the apple store is much closer in the US than in canada...
They don't. You're going to have to wait in line again as if you were buying it for the first time.
I am in the same boat, I am going to Pre-order a 64GB 6+ tonight unlocked t mobile, and if i don't like it i have 14 days or INCASE it is actually locked i can just send it back, Either way i get to atleast play around with it without leaving my house to go to the apple store. don't mind waiting if none are in stock after the 14 days. 
The joke works better if you can't exchange it.
That being said, I'm buying an unlocked 128GB version of each, just in case.
Will I be able to return it to an Apple store instead of shipping it back? That's what I would rather do. I hate shipping.
According to this page you cannot return iPhones purchased online in a store: http://store.apple.com/us/help/returns_refund
You misread that. Products purchased from other online retailers cannot be returmed to apple.
Edit: actually I misread it. Is this new? "Note: An iPhone purchased on the Apple Online Store is ineligible for return to an Apple Retail Store
It seems last year I went with my sister who returned her online phone at the store. I think she bought online for instore pickup but still returned it in the store.

I myself am ready for the 5.5" phone since I don't mind my 3ds XL. Plus, it'll be MUCH thinner than a 3DS XL too

The extra stock is for warranty exchanges if something is wrong with the phone. They aren't giving those phones out for people that change their mind.
