I wish to scan a document and open it in Pages or Text Edit so I can edit the document.

I open Print/Fax in System Prefs, and follow the instructions, but there doesn't seem to be the facility to open the document in an application.

Surely this must be possible, help would be appreciated, many thanks.

It's possible, you just need to scan and use an OCR module (optical character recognition).

There should be an OCR option within your scanner utility that will allow you to save as a PDF (they're all different, but Brother is usually pretty good).
