I often buy esims which get sent to my email. I am also not always on desktop and only have my phone with me.

The eSIM carrier emails me a QR code to scan. I need to scan this QR code to initiate the eSIM activation process.

How do I scan this QR code without a desktop or another device to scan from?

Using an iPhone 15 with iOS 18.5

just tap and hold the QR code? At least that's how it works in the Photos app when there is a QR code present in the picture. Oh, that have that working when the iPhone language is not English/French/German/Japanese/(maybe some others), go to Settings -> General -> Language & Region -> scroll all the way to the end and switch ON 'Live Text'. With this ON, all text is selectable/actionable in all pictures.

So when tap and hold on the QR code doesn't work in the email, take a screenshot and tap and hold the QR code in the picture ;-)
