Has anyone figured out how to scan with a Printer/scanner/copier hooked up to the Airport Extreme (AEBS version)? The print function works great, but no scanning capability.

It isn't exactly impossible, but improbable.
The driver provided by Canon is a USB-only Carbon driver (most non-postscript drivers are -exception- Brother). Apple has implemented port redirection from print drivers to the USB on the Airport Express/Extreme. Requires software hacks both on the Mac and in firmware on the Airport. That's why Apple tells us that only printing works (second paragraph):

If you could find a third party driver that would work over a network, I think scanning would work, because the Extreme/Express is capable of the standard protocol HP Jetdirect/port 9100. But that's a big if!

Here are some links to people working on this:

Edit - although I thought I remembered reading that they're working on a TCP/IP "backend," it looks as though it's all for USB or SCSI or firewire.
