The Macbook Air's unfortunately use a TN panel, so you're not going to get great quality or viewing angles compared to an iMac or Macbook Pro Retina for instance.

But on Windows you can make adjustments to colour, brightness & contrast and I don't see how you wouldn't be able to get colours matching OS X..

The display is the same after all, it's just a matter of color correction. I've seen a Macbook Air display before, and in my opinion for a TN panel it looks quite good compared to the competition.
