I have a Ipod Touch with the 2.0 firmware. I love the new options to take screen shots. But how do people take screen shots of the lock screen and others that don't work with it ?

theres a very old thread on here thats command line based that took screenshots of any screen you had showing on the display but I dunno if it works on 2.0, if you want to try it: https://forums.macrumors.com/posts/4313599/

downfall to this is you can only take one screenshot at a time, if you take two screenshots this will just overwrite the excisting image it had already taken.

But you could delete the 1 screen shot.. to take another.

as long as you transfer it to pc/mac first
