I found if I tap on the iPad icon on the top left hand corner the webpage I'm looking at automatically scrolls to the top but I wondered if there is a shortcut which would automatically scroll to the bottom?

Nothing automatic that I know of...

Tapping the bottom left or right corner twice does a short "burst", otherwise I usually just swipe from top to bottom till I reach the bottom.

I don't know of anything for safari. Atomic web browser can be configured to put a scroll-to-bottom button at the bottom of the screen. iCab has a scroll-to-bottom module that takes two taps to activate.
