iPod touch SDK? How is it done today?

Silly question, how are all the apps that are available via a Jailbroken touch or iPhone developed today? What tools are being used in place of the as yet unreleased SDK?

The installer.app is the only thing that you have to jailbreak your device for, then you just one click download a lot of the stuff onto the touch.

The programs are developed by third party people and Apple has based the touch on OSX so logically there is some UNIX based programming.
