I thought you could tell spotlight to only search documents of particular type. In Snow Leopard I attempted to search with "kind:pdf photography".

However with results I get all kinds including: events, folders, presentations, etc.

Is it possible or am I doing something wrong?

Don't use the Spotlight search window, as your options are limited there. Use a Finder window to search. There you can add any criteria to the search that you wish. After you type in your search terms, click the "+" button to the right of the "Save" button which is under your search terms. From there, you can click the drop-down menus and choose from a variety of search criteria, including Kind and File Extension.
