Search Time machine backups? Recover a specific file

Hi,

I want to recover a sent message in Mail which has now been deleted.

I know the email address it was sent to but can't remember exactly when I sent it.

Does this mean I will have to manually search through the Sent folder in Time Machine to find it (which could take ages) - or is there a quicker way?

When I've tried this (from what I remember) I'll recover the entire account, not just the single message you're looking for. Someone correct me if I'm wrong.
