So how secure is the secure erase with remote wipe?

For the 3Gs and newer, it's very secure. For older devices, it can be secure, unless the process is stopped early.

Does what it says on the tin.

As long as the finder is not savvy enough to disable the remote functions by removing the sim or turning off the feature the wipe is good.
