What is the main difference between the two? Also, what are the benefits of the two? Can you control the amount of VM like you were able to do in Pre-OS X (9 and 8) ?

1) One is encrypted, the other isn't
2) In theory secure vm is more secure. In practice I haven't heard of anyone trying to attack a system by reading paged out data.
