What exactly is the Security deposit? Also what happens iof you buy the device full price? No contracts or something?

To get a better response, which country are you talking about buying an iPhone in? (and which store do you want to buy from?)
The security deposits means you have either bad credit or no credit, so AT&T won't sign you up for a post-paid plan w/o putting down some cash first. It's $500.
No-commitment price means you don't have to sign a 2 year contract for service, although you will really want to talk to an AT&T rep about that one.
