I have a new notification in Software Update. Somehow I missed the notice for 2021-001, but I see that it has been discussed here. I assume that I can skip 001 and just update with 002 but I usually wait until I see discussion about it. I don't see that yet...

The 2021 Update thread title mentions both, but I only see comments about 001. I didn't notice that both were in the title before posting the above.

Unless you have a unique installation, I think it will be alright to allow the 002 update to start. On my older (2012) iMac everything just works fine after the 002 update. Actually, I think this update only fixes a "sudo" bug, and it is based on the 001 update, which has been fine for most people. See the other related post in this forum.
 
Like Combo updates, Security updates are cumulative.

001 and 002 are both ~1.7 GB in size.

Since 002 was only produced to address the sudo issue, a delta update would have been much, much smaller.

That said, I'd be cautious before jumping into any update, and not install it immediately, or before polling sites like Howard Oakley's blog, and see what issues arise.
