To routinely see senders' email addresses in received mail in Mac Apple Mail:
Mail/Preferences/Viewing: "Use Smart Addresses" checkbox.
If it is unchecked and sender’s email addresses are not showing, then check that box, close preferences, close Mail.
Then open Mail, open preferences, and uncheck "Use Smart Addresses”.
Then close preferences, close Mail.
Then open Mail and sender’s email address will show.

Worked for me just now. Easy way to check that a sender is really the sender I think they are. Wish I could find a way to do this in iOS mail too.
