I have an iphone 7 for last three years. I have been using conventional watches (Quartz and Automatic). If I want to buy a branded watch which displays day, date, time, moon phase, stop watch and timer then it is going to cost me a substantial amount. I have never used an Apple Watch but I have seen some of the functions being displayed. I would like to know if I can get an Apple Watch which displays Day, Date, Time and Moon Phase and approximately how much it will cost me. I am not interested in the health functions. As the watch I require should be thin and light and not very expensive therefore kindly let me know as to which series (1,2,3,4,5 or 6) and what size it should be (38,42 or 44 mm).

Every single Apple Watch does what you want. Main question is, if you want an always-on display or not.
You can compare models here:

SE is the best option for a basic watch right now. Smaller one in aluminium is cheaper.

Price will vary based on location, you can even get access to The Internet outside of the USA these days. :)
