My objective is to run Sequoia with OpenCore Legacy Patcher on 2T SSD 2012 cMP 5,1.

Looking at Crucial 2T SSD - Good Call? Maybe OK, depending on ????

Question

Is SDD practical for this?
Can you recommend any models to use or avoid?
Anything I need to be warned about?

Computer Used For
Any kind of programming, mostly web applications with database emphasis
Computer has 2 Linux virtual system under VMWare Fusion, running on local network only, nothing the public can reach.
Adding a Windows 11 VM
Connect from the VMs to public servers to upload changes
Gaming: nah, maybe one every 2 years for a graphics test


What I Have
2012 cMP 5,1
2 x 3.33 GHz 6-Core Intel Xeon
AMD Sapphire Pulse RX580 8GB PCI-E Video Card with Apple Metal APU, DirectCompute 11
64G DDR3 (can faster memory be put in to replace this?)
1x4K monitor (want 2) Samsung LU32R591CWNXZA 32" 4k UHD Curved Monitor

2x8T HDD
1x4TB HDD

System drive is 1T HDD with Catalina -> headed for a freezer or other survivable storage as a backup, in the unlikely unfortunagte event I need to rollback due to catastrophy

You're overthinking this - it's going to work fine. Just expect a half dozen reboots or so during the installation.

If Migration Assistant gives you trouble, erase the new SSD and clone your HD across. Then install Sequoia again on top of the clone.

Does "cloning" require a special process? Can it be done by simply copying everything from the HDD running Catalina over to the erased SSD?
 
If Migration fails, revert the root patches.

Thanks for that. I did read the OCLP docs when installing Monterey, and that note would have saved me two days of headaches. Pretty sure it wasn't there at the time. I even searched the bug reports - mentions of Migration Assistant problems, but no good answers. Cloning in advance avoided the problem, so I never returned to it. Figured it would be fixed by now.

Does "cloning" require a special process? Can it be done by simply copying everything from the HDD running Catalina over to the erased SSD?
I use SuperDuper, but there are other clone apps, like CarbonCopyCloner. Even Disk Utility can do it with the Restore command - sometimes. I've had erratic results using DU for cloning.

I don't see anyone mentioning the AVX2 limitation.

More and more software in including AVX2 code which the old Xeon CPU does not support.

Apple is slowing adding AVX2 code into the OS, a dead end looms in the distance.

I have installed Sequoia on a spare SSD to test but I'm finding some software fails to run because of the lack of AVX2. In my case Adobe Lightroom, Safari, and What's app.

The most compatible OS to use is Monterey, but it is end of life, so if you want future security updates consider Sonoma.

Supporting the latest Mac OS on the 5.1 is becoming increasing difficult, as they say.... "Your milage may vary!"
