Thinking about going with something smaller and lighter like the rMBP. How much do you think I should ask for my 17"? Here are the specs:

Early 2011 model
2.2GHz Intel quad-core i7
16GB Crucial RAM
512GB Crucial M4 SSD
High-res glossy screen (1920x1200)
AppleCare until 4/4/2014

It's in excellent shape. No signs of wear at all except on the bottom cover.

I'd also include a few accessories, like all original items, a USB 3.0 ExpressCard, the original 750GB HD and 4GB RAM, and an optical drive to HDD kit.

Not trying to sell it here, just wondering what you guys think I should ask. Would $2799 be fair given the condition, upgrades, accessories, and AC?

Depends on where you will sell it - CL in a huge market or eBay you best bet.

You need to find a large market b/c it will be difficult to find someone who values all these upgrades. It may take some time...as far as price goes it may be better to sell the RAM and SSD separate.
 
Imho....

a good asking price would be in the $2100-2300 range, with all the extras you mention to sweeten the deal.

If selling through a online site, dont forgot to factor in shipping costs/fees

Mac2Sell says I should ask $2690, but I don't want to just go off of that. Since it does have AppleCare as well, would $2499.99 be fair if I put up on eBay?

I live in Chicago so listing it on Craigslist wouldn't be an issue either, but I prefer eBay.
