Greetings all,

I'm selling my JB 3GS (3.1.2, 5.12.01, tethering via peacefulinsanity settings) and the buyer wants me to keep as much of my JB, etc. as possible intact. I want to wipe down all my personal data while leaving my customizations.

Any suggestions? I assume that my Cydia has my Paypal info stored from when I purchased some apps, and there are probably other things that I'm not remembering right now. Does the "erase all content and settings" kill my jailbreak/tethering? Is it advisable to restore it via iTunes & then re-JB? If so, will I still be able to keep 3.1.2 (the buyer REALLY wants that)?

Yes, if you do the earse all content and settings you will need to restore.
If you got your SHSH's you can restore back to 3.1.2 but judging by your baseband you wont be able to unlock it now.
Also everything will be gone along with your JB and JB addons.
You will have to JB it again and then install the stuff he wants from Cydia.

is that right? I thought it did the same this as an iTunes restore? Why would that button exist on the phone if I was forced to also do it with iTunes?

Thats what it does.
It deletes everything including the iphone OS installed on the phone.
So the only way to get it to boot up again is to restore it.
It will show the plug to itunes logo after you click it.
 
Thanks for letting me know. Is this the way you'd advise me to go about it? I want to keep as much as possible without compromising my personal information.
