Selling iPhone (water damaged) on ebay (erasing data??)

I just sold a water damaged iPhone on ebay (3g, latest firmware). I would like to erase all my personal data and everything on the phone. The screen is white and i can't access the reset through the actual phone. iTunes does recognize the phone. My question is, will the restore option in iTunes completely erase everything, contacts, pictures, texts, apps, etc?

Plenty of people. Search eBay. People use them for parts or they fix them.
